New Chef is ‘Secret Sauce’ for Statham’s Courtyard Dining
Statham’s is well-known across Kilkenny for serving succulent farm-to-fork meals, sweet treats, organic wines, delicious cocktails, and amazing Cloud Picker coffee. The appointment of its new Executive Chef, Ken Harker, formerly of the Michelin starred Lady Helen restaurant, has helped to elevate Statham’s menu with subtle tweaks to the food concept.
The mantra of Statham’s has always been to seek out quality producers, from Kilkenny and Ireland, with whom they enjoy a trusted relationship and are proud to support. Local food heroes such as the Ging Family Farm, located just 15 minutes from the hotel, Ballykeefe Distillery, Toonsbridge and Goatsbridge Trout Farm are regular favourites on the menu.

Our courtyard is now open for comfortable alfresco dining. We’re looking forward to welcoming diners to sample the new menu.”
The Statham’s team are excited to welcome guests to its outdoor courtyard, one of Kilkenny’s tranquil alfresco spaces, to sample delights from the new menu which includes Small Plates of Lamb Ragout Croquettes with a parmesan & truffle herb emulsion or Smoked Trout with apple, fennel, cucumber, dashi & tuille. For Large Plates Statham’s Steak Frites is a popular choice; Ballykeefe 7oz sirloin, confit garlic butter, salsa verde with fries or Chicken Schnitzel with Kilkenny beer mustard, asparagus and garlic butter. For Sweet Plate options, highlights include Roast Banana Ice Cream with peanut crisp, salted caramel and pecans or Strawberry & Vanilla Mascarpone with ginger shortbread; a dash of basil oil lifts the dish.
Looking ahead to a brighter post-covid future, the team at Pembroke Kilkenny are moving forward with their exciting renovation plans for the city centre boutique hotel. During the lockdown, John Ryan, proprietor, has invested in creating a comfortable, luxurious venue with imaginative safety design features throughout the property. Pembroke Kilkenny’s behind the scenes transformation will continue for the rest of 2021.
Named after the iconic Statham-Ford Special racing car, Statham’s by Pembroke Kilkenny pays tribute to Statham’s Garage which designed and built an award-winning car on the site where the Statham’s venue now stands. Breakfast is served from 8 am followed by mid-morning Cloud Picker Coffee and pastries, lunch and dinner in the Statham’s courtyard each day. Walk-in diners are welcome.
